The Cooperative manages a vineyard area of approximately 500 hectares, thanks to the essential contribution of its member farmers. Half of this area is made up of long-established vineyards, mainly trained using the traditional Alberello Pugliese system, from which the most precious product is obtained, while the remaining area consists of younger vineyards trained to low trellises.

The main objective is to enhance the native grape varieties of the Salento region. The undisputed leader of the Cooperative's production is Negroamaro, the native grape variety that best represents the origins of the Salento territory. The Winery protects and promotes the negroamaro grape variety together with its winegrowers. The pure vinification of this grape variety results in structured red wines, with high alcohol content, as well as high-quality rosé wines.

Negroamaro is a very important red grape variety in Puglia, especially in Salento. Its name has different interpretations: the first derives from the Latin term Niger (black) and the Greek Mavros (bitter); the second comes from the dialectal term niuru maru, referring to the characteristic dark color of the grape berries.

Its origins are ancient and uncertain, dating back to the Greek colonization in the 18th century BC. It is likely that Negroamaro was first introduced in the Ionian part of Salento before spreading throughout the entire Salento region and part of Puglia.

The winegrowers at the winery pay great attention to the care of other local varieties in the area, such as Primitivo, Malvasia Nera, and Malvasia Bianca, which tell a story of quality and passion. The cultivation of some international varieties is also present: from the white varieties Chardonnay and Fiano, important wines are produced.

The vineyards fall within the D.O.C. Salice Salentino production area, which represents the true face of a Salento with its thousand colors, intense fragrances, and fantastic emotions.
